先日お越しいただいたお客さまから思わぬお土産をいただきました。
なんと砥石、しかもたくさんの！
たくさんの砥石です
さっそく全て包丁を当ててみました。
白鋼、青鋼、ステンレス系で感じは変わりますが上段左のクリーム色が8000番
レンガ色の中砥は、たぶん800番、中央の薄茶色が1000番で二枚合わせの白は5000番の仕上と思います。
下段左の灰色も仕上げですが5000番よりわずかに荒いかもしれません。
小ぶりな二つは1000〜1200番の中砥と5000番の組み合わせです。
番手（粒度）はすべて推定です。
最近使っているのがほぼ全ての番手がセラミックで稀にダイヤモンドと天然ですが
古いタイプのキングの800、仕上げの6000と8000も独特の使い勝手で手放せません。
いただいた砥石はしっかり水を吸わせて滑らかに研ぐ懐かしいタイプでありながら
研磨力はキングに勝るという優れものです。
またキングの弱点であるステン系にも相性が良いと感じました。
特に下段の灰色はグレステン、イノックスの最後の糸引きに使うとキッと食い込む刃がつきます。
青鋼、白鋼の本焼きをセラミック系砥石で研ぐのはちょっと味気なさを感じていました。
このいただいた砥石は中砥も仕上げも炭素鋼にはすごく馴染みそうです。
砥石も包丁もそうですがしばらく使って一皮むけたあたりで本来の性能が出て来ます。
どの包丁に合うのかしばらく楽しい試行錯誤が続きます。
