今年は神宮の式年遷宮です。
通常10月12日の篠島のおんべ鯛奉納は本年に限り御遷宮のため9月の10日です。
本年も奉納おんべ鯛を調製する包丁の研ぎを頼まれました。
この包丁は神宮から支給され、柄には神宮司廰の焼き印があります。
大鯛も扱うためにかなりダメージがあり手持ちの中では一番荒い
240番からの研ぎになりました。
鋼はたぶん白二Bか白三で研ぎやすい包丁ではあります。
240番から400番、800番、3000番と研ぎ進み最後は一番左の天然砥で仕上げました。
裏はセラミック砥石ではなく普通の6000番できれいにカエリは取れました。
出刃を天然の合わせ砥で仕上げる必要は無いのですが
1000年以上続く伊勢神宮への篠島おんべ鯛奉納で使う包丁は
先人もきっと天然の合わ砥での仕上げまでやったはずです。
無駄と思えるほど手間をかけて最高の鯛を用意し調製する。
それが島人の神宮への思いなのです。
