篠島の素潜り漁

一ヶ月の禁漁期間が終わり素潜り漁の解禁でした。
まずは今日の仕入れです。

アワビです。

鮑

鮑


もっとも大量に仕入れました。大きさは120〜200グラムくらいです。

ナマコです。

この時期は「ナマコの解禁」と言えるくらいメインの幸です。
我が家もみな大好きでこの時期が待ち遠しく、さっそくいただきました。

サザエです。

焼きには中から小さめ、刺身には大きいものを仕入れます。

本ミル

今日の解禁でたった一つだけ水揚げされた本ミルです。

ハマグリ

ずっしり重い貝です。少なそうですがこれで15キロあります。

島の素潜りではなく、三重県神島産の伊勢エビです。
これは運良く値上がり前に大量に仕入れた伊勢エビです。

浜値が二倍に高騰しました。最近の偽装表示騒動は、まったく迷惑です。
年末まで高値が続くと思われます。
価格が落ち着くまで伊勢エビの仕入れは控えようと思っています。
もちろん手持ち分は今までと同じお値段でお楽しみいただきます。

伊勢エビ以外は通常通りの仕入れが出来てほっとしています。
アワビは刺身、肝も含めて陶板焼きで、ナマコはさっと湯がいてポン酢や醤油で
ハマグリは酒蒸しで濃厚な味がお楽しみいただけます。
どれも常時用意しにくい素材ですので別注でお楽しみいただいています。
