「研ぐのが大変でしょう？」と言うリクエストにお答えします
横浜在住の主婦の方からメールをいただきました。
全部研ぐわけではありません一日で使うのは出刃、柳刃で多くても3〜4丁です。
包丁は一日使用すれば、ほとんどの場合研ぎます。
切れない包丁ほど嫌なものはありません。
我慢できなくなるまで使い倒してから研ぐより、毎日研いだ方が物理的にも精神的にも省エネです。
柳刃で、刃こぼれが無ければ、仕上げ砥石を刃先に軽く当てる程度です。
完全にかえりが出るまでは研ぎません、最後の糸引きでかえりが揃う程度の研ぎです。
これが使用後、毎日の研ぎで、所要時間は、ほんの数分です。
この研ぎが3〜5回くらい続くと刃の角度を守るために一度1000番の中砥石、
必要に応じてもっと荒い砥石に戻って切り刃全体を研ぎます。
包丁には一本一本クセがあり、すべて研ぎ方が異なりますが糸引きはできるだけ小さくします。
究極の手抜きとして、切れが落ちた包丁は糸引きと軽い裏押しだけで切れは復活します。
数秒で終わります、しかしこれをやると後で必要な研ぎしろが大きくなり包丁の寿命を縮めます。
また裏だけを研いでも刃は付きます、楽ちんですが裏の刃が部分が広くなって、
裏すきが浅くなると引いた刺身がまとわりつき身離れが悪くなります。
うまく表現できませんがしゃきっとしない酔っぱらったような力の無い包丁になってしまいます。
刺身を引く柳刃は裏に糸引きは付けませんが、皮引きなど、雑用に使う柳刃は
裏にも浅く小さな糸引きを入れます、皮が裂けて残ってしまうごく稀な交通事故が防げます。
また柳刃はまな板も切っています、まな板に当たる切っ先のアール部分は、感覚的に
ほんのわずかだけ刃先を鈍くしています。
出刃は若干コントロールが難しくなるような気がしますが二段刃に研ぎます。
切り刃は一般的な角度より、切っ先部分から中央くらいまで、しのぎを上げて鋭くしています。
逆に中央から顎までは、刃先部分だけ、かなり鈍い角度に研ぎ上げます。
通常の使用後の研ぎは切り刃部分全体は研がず包丁を起こし気味に刃先だけを研ぎます。
ただし柄を持つ右手で砥石との角度をしっかり決めないと、なんともイラつく切れ味になってしまいます。
糸引きは、起こし気味に、裏にも浅く小さな糸引きを入れています。
出刃では、仕事に支障がない、ほんの小さな刃こぼれは見なかった事にします。
一ヶ月に一度くらいは切り刃全体を研ぎ、好みの姿に整えています。
ただし、出刃は必要以上に切れすぎても仕事のリズムが狂い、使いづらいくなります。
「切れない」と「切れを抑え強くする」は異なります。
それぞれの包丁の特性、使い勝手、砥石の種類で研ぎは変ってきます。
包丁の特性と使い勝手に合った研ぎ方が大切で自分の包丁を知る事です。
さらに砥石との相性で組み合わせはかなり多くなります。
あまり参考にならないと思いますが以上が自分の研ぎの手順です。
包丁はいかに大切にしても研げば小さくなる消耗品です。
切れないから無理をする、無理をするから刃こぼれが起きる、
刃こぼれを消すために大きく研ぐ・・・悪循環です。
毎日の研ぎは大切な包丁の寿命を延ばします。
