伊勢湾のコウナゴをたっぷり食べていました
小さなもので1.2キロ、大物は70センチ、3.4キロでした。
36名さま分の刺身です。
昨年購入した酔心の6寸出刃でさばきました。
切れ味については三枚おろしから最後の梨割りまで終えても不満はありません。
3.4キロの梨割りには長さ不足気味ですが、苦もなく割れました。
酔心独特のやや深めの裏すきと刃付けは文句無しです。
初めて手にした時は「出刃がこんな細い裏で大丈夫か」と思うほど繊細な刃付けでした。
不安はありましたが切り刃の角度ときれいなはまぐりが気に入って
砥石を当てずにそのまま使い始めました。
購入時のままで研がずに使い始めた包丁は他に記憶がありません。
皮引きに使うトウジロウの9寸がおもちゃに見えるくらい力のある出刃です。
手に馴染むまで、この包丁に引っ張られそうです。
